Ceres and Sephie’s sweetcorn cookies

Adapted somewhat from King Arthur’s recipe here. My version bakes up super flat and more deeply caramelized.

I’d really like to make a version of this recipe with honey, but that will have to happen in another post.

Ingredients

170 g salted Kerrygold butter

225 g white or golden sugar (I use Judee’s caster)

1 egg (I use Vital Farms Restorative)

Vanilla bean paste (or you can use extract – either way I vote for Nielsen-Massey)

80 g cornmeal (I use Red Tail Grains’ cateto)

160 g all-purpose flour (I use Red Tail Grains’ sprouted one)

½ teaspoon baking soda

For topping, Supernatural’s Rainbow Starfetti

Method

Put on some music and sing along. Aren’t you so glad to be alive? You could have let it kill you and you didn’t.

Melt the butter. Brown it if you’re a hedon.

Preheat the oven to 350˚F. Lay a sheet of parchment down on a baking tray.

Weigh the sugar into the mixing bowl. When the butter is all melted, pour it over the sugar and mix well. Let this mixture sit while it cools for a few minutes. During this time I usually make and drink an espresso.

Add the egg and mix until well combined.

Use your intuition to add the right amount of vanilla bean paste or extract. I strongly recommend paste in this cookie because the little flecks will be visible and they add a touch of ostentation to the whole thing. This is always desirable in offerings, even and especially if you are only offering to yourself. Self-offerings are a strong basis for any spiritual practice.

Weigh in the cornmeal and flour and measure in the baking soda. Mix everything together until there are no more dry streaks.

Form the dough into balls. I like to make these cookies on the smaller side, about an inch in diameter.

Pour the sprinkles into a shallow bowl. Dunk the cookie dough balls into the sprinkles. Try to get them just over halfway covered.

Arrange the cookie dough balls sprinkle side up on a baking sheet. Give them a lot of room, as they will spread very thin. Better to bake fewer cookies per batch than end up with them all stuck together. I only do half a dozen cookies per full size sheet pan.

Bake for 7-8 minutes, or until the centers of the cookies look set and the bottoms are golden.

The cookies will deflate as they come to room temperature; this is desirable.

If you’re a cookie scooter, these are a great candidate for a scoot, but be gentle – because of the cornmeal they do collapse and wrinkle more easily than an all-flour cookie.

Note on ingredient sourcing:

If you’re offering to a Goddess of the Earth, especially a Grain Goddess, there are a few considerations you may want to account for when you’re putting together ingredients for this cookie. You may want to shop organic. You may want to shop local. You may want to focus on buying heirloom varietals or single origins or fair trade. You may also be limited with your budget!

No one can tell you what the “right way” to get ingredients for offerings “really is” because that’s something you have to run through your own Venusian ethics. My ethics value both organic farming and supporting local small business, so I get my cornmeal and flour through the farm-to-mill boys at my local farmers’ market, and since I’ve vetted them I link to their store and evangelize them to you. They’re great guys. I know them personally. If you’re in any doubt, buying from them will do you right.

Here’s what I’ll ask you, though. How much do you really know about your food? Does your sugar come to you processed through a factory, or does it still contain any nutrients from the sugar cane juice? Have you compared the sugar you use to other sugars and decided on the one you like best based on your personal taste? Or do you prioritize something other than taste when you are selecting sugar for baking? What kind of corn is your cornmeal made out of – does the packaging tell you, or is it anonymous? What does that tell you about the supply chain? Do the chickens whose eggs you’re using have space to roam? Are they fed healthy diets? What exactly are you putting money toward when you shop for food?

The more intention you can involve in your sourcing process, not only for this recipe but for all the food you offer to yourself and others, the happier Goddess will be. This is why I provide the specifics of the ingredients I’m using. I support not only the flavor and quality of the ingredient itself, but also the Venusian ethics and Saturnian structure behind each business I link here.
